Mexican Feast with Old El Paso


On the first evening of the weekend with Sykes Cottages, after we had all settled in and we waited for Sara-Jayne to arrive, I cooked up a storm in the kitchen with Old El Paso* Restaurante Chicken Tinga kit. 

This kit comes with 8 Small Tortilla Wraps, 1 Chipotle Sauce and 1 Tinga Chicken Seasoning.

You also need 3 Chicken Breasts, 1 Onion, 1 Avocado and 1 Lettuce. Plus I cooked up some peppers with Season-All and also used some Salsa. We also made some Nachos, using tortilla chips, salsa and cheese on top of that and cooked it in the over for 20 minutes or so.


To make the chicken:
  1. Heat up a pan of 200ml of water and add the Tinga Chicken Seasoning.
  2. Using a knife, put 2 slashes on either side of the chicken breast and put these in the pan with the seasoning mix. 
  3. Cook these for about 20 minutes, making sure they don't stick to the bottom of the pan and turning regularly.
  4. Ensure they are cooked, remove them from the pan and put them on a chopping board. Using two forks, shred the chicken into smaller pieces, very similar to pulled pork!
  5. Return these to the pan, with the sachet of sauce and cook for a few minutes, again stirring it regularly to make sure it doesn't stick to the pan.

In the mean time while cooking the chicken, chop the lettuce up into strips and dice the avocado into small cubes. For the tortilla wraps, pierce the packaging and put them in the microwave for 30 seconds so they are warm.

To make the peppers:
Slice up the peppers into thin strips or chunks, depending on how you prefer it, put some oil in a frying pan with the peppers and add the seasoning. 


You then stuff as much as you can into one tortilla and enjoy! My favourite combination is chicken with pepper and avocado. The creaminess of the avocado goes so well with the spiciness of the chicken.
